Marinade Preparation
- In a mixing bowl, combine vegetable oil, minced garlic, lemon juice, dried ginger, dried coriander, paprika, turmeric, and salt. Whisk together until well blended.
Marinating the Chicken
- Rub the marinade all over the chicken, making sure to coat the inside of the cavity. Place squeezed lemon halves inside and tie the legs. Marinate for at least 30 minutes at room temperature or refrigerate for up to 4 hours.
Roasting
- Preheat the oven to 190°C (375°F). Arrange a roasting pan.
- Place the marinated chicken in the roasting pan and roast for 45 minutes.
- After 45 minutes, brush mango chutney all over the chicken and roast for an additional 20-30 minutes until the internal temperature reaches 75°C (165°F).
Resting
- Remove the chicken from the oven and let it rest for 15-20 minutes before carving.
