  • 4 pieces boneless, skinless chicken thighs Ensure they are patted dry
  • 2 tablespoons olive oil Can substitute with avocado oil
For the Coating
  • 4 cloves minced garlic Fresh is best
  • 1/2 cup freshly grated parmesan cheese Pre-grated can be used but may not crisp as well
  • 1 teaspoon dried oregano Crush before adding for better flavor
  • to taste salt Kosher salt recommended
  • to taste black pepper
Optional Ingredient
  • to taste fresh parsley Use for garnish, dried can be substituted

Method
 

Step-by-Step Instructions
  1. In a medium mixing bowl, combine 4 cloves of minced garlic, ½ cup of freshly grated parmesan cheese, 1 teaspoon of dried oregano, and salt and pepper to taste. Mix until thoroughly combined.
  2. Pat 4 boneless, skinless chicken thighs dry with paper towels. Drizzle with 2 tablespoons of olive oil, rubbing it evenly over both sides.
  3. Firmly press the garlic-parmesan mixture onto each side of the chicken thighs.
  4. Preheat your oven to 375°F (190°C). Arrange coated chicken thighs on a baking sheet lined with parchment paper.
  5. Bake for 25-30 minutes or until golden brown and internal temperature reaches 165°F (74°C).
  6. Remove from the oven and let them rest for about 5 minutes before serving. Garnish with fresh parsley if desired.
