- In a medium mixing bowl, combine 4 cloves of minced garlic, ½ cup of freshly grated parmesan cheese, 1 teaspoon of dried oregano, and salt and pepper to taste. Mix until thoroughly combined.
- Pat 4 boneless, skinless chicken thighs dry with paper towels. Drizzle with 2 tablespoons of olive oil, rubbing it evenly over both sides.
- Firmly press the garlic-parmesan mixture onto each side of the chicken thighs.
- Preheat your oven to 375°F (190°C). Arrange coated chicken thighs on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes or until golden brown and internal temperature reaches 165°F (74°C).
- Remove from the oven and let them rest for about 5 minutes before serving. Garnish with fresh parsley if desired.
