Method

Step-by-Step Instructions
  1. In a mixing bowl, beat 1 cup of salted butter, ½ cup white granulated sugar, and ½ cup light brown sugar on high until the mixture is light and fluffy, about 2-3 minutes. Add in 1 large egg and 1 teaspoon of vanilla extract, mixing until well combined.
  2. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper to prevent the Strawberry Pop Tart Cookies from sticking. Mix the dough again gently.
  3. Scoop about ¼ cup of dough and roll it into a ball. Use your thumb to create a small hole in the center of the dough ball, then fill it with approximately 1 tablespoon of strawberry jam. Gently fold the edges over to seal the jam.
  4. Slide the baking sheets into your preheated oven and bake the Strawberry Pop Tart Cookies for 10-12 minutes, or until the edges are lightly golden and cracks form on the tops. Allow cooling for about 5 minutes.
  5. Beat together 8 ounces of cream cheese and ½ cup of salted butter until creamy. Gradually add in 3-4 cups of powdered sugar and 2 tablespoons of milk, mixing until you reach desired consistency.
  6. Once the cookies have cooled completely, frost the tops of each cookie and sprinkle colorful sprinkles on top for a festive touch.
