  • 2 cups Hot Water Use water at 176°F (80°C) for matcha.
For the Matcha Milk
  • 2 tablespoons Matcha Powder Use high-quality matcha for best flavor.
  • 2 cups Milk (or milk of choice) Almond, macadamia, or oat milk can be used.
  • 1 cup Evaporated Milk Adjust according to taste.
  • 1/2 cup Condensed Milk Adjust or substitute based on preference.
For the Fillings
  • 2 cups Strawberries Washed and sliced.
  • 1 cup Coconut Jelly Store-bought is fine.
  • 1/2 cup Strawberry Heart Jelly Optional for visual appeal.

Method
 

Cooking Steps
  1. Bring a pot of water to a rolling boil over medium-high heat.
  2. Add the sago pearls and cook for about 15 minutes until mostly transparent.
  3. Remove from heat, cover, and let the sago sit for an additional 10-15 minutes.
  4. Strain the sago through a fine-mesh sieve and rinse under cold water.
  5. In a heat-proof bowl, sift the matcha powder and whisk in hot water until frothy.
  6. Gently pour in your choice of milk to create matcha milk.
  7. In a large bowl, combine the cooled sago, evaporated milk, and condensed milk.
  8. Fold in the matcha milk, sliced strawberries, and coconut jelly.
  9. Distribute the mixture among cups and enjoy immediately or chill briefly.
