For the Rice
  • 1 cup Uncooked Rice Jasmine or quinoa
For the Chicken
  • 2 lbs Chicken Breasts Can substitute with thighs
  • 2 tbsp Olive Oil For sautéing
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tbsp Chili Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Onion Powder
  • 1 tsp Oregano
For the Sticky Sauce
  • 1/2 cup Soy Sauce
  • 1/4 cup Honey
  • 2 tbsp Rice Vinegar
  • 2 cloves Garlic Minced
  • 1 tbsp Sriracha Adjust to taste
  • 1 tbsp Sesame Oil
  • 1 tsp Ground Ginger
  • 1 tbsp Arrowroot Powder or cornstarch
For the Spicy Mayo
  • 1/2 cup Mayonnaise Dairy-free mayo if needed
  • 1 tbsp Sriracha Adjust to taste
  • 1 tbsp Water For drizzling consistency
For Garnish
  • 2 tbsp Sesame Seeds

Method
 

Step‑by‑Step Instructions
  1. Cook the rice according to the package instructions (15-20 minutes) and set aside.
  2. Season the chicken with salt, pepper, chili powder, smoked paprika, onion powder, and oregano. Cook in a skillet with olive oil for 6-7 minutes per side.
  3. In a bowl, mix soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, and ginger. Pour over cooked chicken in the skillet and simmer for 2-3 minutes.
  4. Mix arrowroot powder with cold water to form a slurry. Stir into sauce to thicken, cooking for another 1-2 minutes.
  5. Steam or roast broccoli until tender, about 5-7 minutes.
  6. Mix mayonnaise, sriracha, and water in a small bowl until smooth for spicy mayo.
  7. Assemble bowls with rice, sticky chicken, broccoli, spicy mayo, and sesame seeds.
  8. Serve hot and enjoy your meal!
