- Preheat your oven to 350°F (175°C) and grease two 4½” x 8½” loaf pans with coconut oil or non-stick spray.
- In a large mixing bowl, combine melted coconut oil, eggs, granulated sugar, and vanilla extract. Whisk until smooth.
- In another bowl, whisk together all-purpose flour, cinnamon, baking soda, cream of tartar, and salt thoroughly until no lumps remain.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Fold in grated zucchini until evenly distributed throughout the batter.
- In a small bowl, mix granulated sugar, cinnamon, and cream of tartar for the topping.
- Fill each greased loaf pan halfway with batter and sprinkle 2 tablespoons of the topping mixture over it. Add remaining batter and top with the rest of the topping.
- Bake for 45 to 50 minutes, checking for doneness by inserting a toothpick in the center.
- Allow the loaves to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
