- Cut the sirloin steak into 1¼-inch cubes, place in a mixing bowl, drizzle with olive oil, and sprinkle in smoked paprika, garlic powder, onion powder, black pepper, and kosher salt. Toss until coated and let marinate for 20 minutes.
- In a saucepan, combine BBQ sauce, soy sauce, honey, smoked paprika, chipotle chili powder, apple cider vinegar, and minced garlic. Simmer for 4-5 minutes until slightly thickened. Reserve some for serving.
- Thread marinated beef cubes, fresh pineapple chunks, bell peppers, and optional red onion wedges onto skewers. Brush with BBQ glaze.
