Step-by-Step Instructions
  1. Cut the sirloin steak into 1¼-inch cubes, place in a mixing bowl, drizzle with olive oil, and sprinkle in smoked paprika, garlic powder, onion powder, black pepper, and kosher salt. Toss until coated and let marinate for 20 minutes.
  2. In a saucepan, combine BBQ sauce, soy sauce, honey, smoked paprika, chipotle chili powder, apple cider vinegar, and minced garlic. Simmer for 4-5 minutes until slightly thickened. Reserve some for serving.
  3. Thread marinated beef cubes, fresh pineapple chunks, bell peppers, and optional red onion wedges onto skewers. Brush with BBQ glaze.
  4. Preheat grill to medium-high (400-425°F). Grill skewers for about 3 minutes per side until beef reaches 145°F and pineapple is caramelized.
  5. Let skewers rest for 3 minutes, then drizzle reserved glaze over them before serving.
