- Preheat your BBQ or smoker to a steady 250°F for indirect heat.
- In a large mixing bowl, combine ground beef with salt, garlic powder, onion powder, black pepper, smoked paprika, and ground mustard.
- Add finely chopped onion, Italian breadcrumbs, shredded mozzarella, and egg to the mixture and gently fold until combined.
- Using a medium cookie scoop, portion out the meat mixture and roll each piece into a ball.
- Add wood chips to the smoker and place the disposable pan of meatballs in it. Cook for about 40 minutes.
- After 40 minutes, brush BBQ sauce over the meatballs and increase the smoker's temperature to 375°F.
- Cook for an additional 15 minutes until the internal temperature reaches 165°F.
- Remove from smoker and let rest for a few minutes before serving.
