  • 2 pounds Ground Beef Use ground chuck for flavor.
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper Freshly ground is best.

  • 1 teaspoon Onion Powder Substitute with fresh chopped onions.
  • 1 tablespoon Smoked Paprika Regular paprika can be used.
  • 1 teaspoon Ground Mustard Skip if unavailable.
  • 1 cup Finely Chopped Onion Use fresh as possible.
  • 1 cup Italian Breadcrumbs Use standard breadcrumbs mixed with herbs.
  • 1 cup Shredded Mozzarella Best to shred from a block.
  • 1 large Egg Binds ingredients together.
For the BBQ Glaze
  • 1 cup BBQ Sauce Any style works except for mayonnaise-based sauces.

Method
 

Step-by-Step Instructions for Smoked Meatballs
  1. Preheat your BBQ or smoker to a steady 250°F for indirect heat.
  2. In a large mixing bowl, combine ground beef with salt, garlic powder, onion powder, black pepper, smoked paprika, and ground mustard.
  3. Add finely chopped onion, Italian breadcrumbs, shredded mozzarella, and egg to the mixture and gently fold until combined.
  4. Using a medium cookie scoop, portion out the meat mixture and roll each piece into a ball.
  5. Add wood chips to the smoker and place the disposable pan of meatballs in it. Cook for about 40 minutes.
  6. After 40 minutes, brush BBQ sauce over the meatballs and increase the smoker's temperature to 375°F.
  7. Cook for an additional 15 minutes until the internal temperature reaches 165°F.
  8. Remove from smoker and let rest for a few minutes before serving.
