- Preheat your oven to 400°F (200°C) and line your baking sheet with parchment paper.
- Season your steak generously with salt and pepper on both sides.
- Wash and cut the fresh potatoes into 1-inch chunks and toss with melted garlic butter, herbs, salt, and pepper.
- Spread the seasoned potato chunks on the sheet pan and roast for 20 minutes.
- After 20 minutes, push the potatoes to one side and place the seasoned steak onto the other side of the pan.
