Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line your baking sheet with parchment paper.
  2. Season your steak generously with salt and pepper on both sides.
  3. Wash and cut the fresh potatoes into 1-inch chunks and toss with melted garlic butter, herbs, salt, and pepper.
  4. Spread the seasoned potato chunks on the sheet pan and roast for 20 minutes.
  5. After 20 minutes, push the potatoes to one side and place the seasoned steak onto the other side of the pan.
  6. Return the pan to the oven and roast for another 20 minutes until the steak is cooked to your liking.
  7. Remove from the oven, let the steak rest for 5 minutes, then serve with garlic butter drizzled on top.
