- Boil the Eggs: Place 4 large eggs in a saucepan filled with cold water. Bring to boil, then simmer for 6-7 minutes. Transfer to an ice bath for 5 minutes before peeling.
- Prepare Sausage Mixture: Combine your choice of sausage meat with thyme, smoked paprika, garlic powder, salt, and pepper. Mix thoroughly.
- Wrap the Eggs: Divide sausage mixture into 4 parts, flatten each into a disc, and wrap around each boiled egg.
- Coat the Eggs: Set up a breading station with flour, beaten egg, and breadcrumbs. Roll each egg in flour, dip in egg, and coat with breadcrumbs.
- Fry the Scotch Eggs: Heat oil to 350°F (175°C). Fry eggs in batches for 6-8 minutes until golden-brown.
- Drain and Serve: Remove from oil, drain on paper towels, and serve warm with mustard or aioli.
