  • 1 cup Oatmeal can be swapped for breadcrumbs
  • 2 slices Whole grain bread (toasted) preferably gluten-free options can be used

  • 1 medium Onion or shallots/leeks as substitutes
  • 1 medium Green Pepper can be omitted or substituted
  • ½ cup Ketchup BBQ sauce or tomato sauce can be variations
  • 1 teaspoon Garlic Salt fresh minced garlic can be used
  • to taste Pepper freshly cracked black pepper recommended

Method
 

Step-by-Step Instructions
  1. In a non-stick skillet, heat a tablespoon of oil over medium heat. Add chopped onion and diced green pepper, sauté for 5-7 minutes.
  2. Combine the sautéed vegetables with Lightlife Gimme Lean Ground Beef, oatmeal, and crumbled bread in a large mixing bowl.
  3. Transfer the meat mixture into a greased loaf pan, pressing it down firmly to shape it evenly.
  4. Preheat your oven to 375°F (190°C). Cover the loaf pan with aluminum foil and bake for 30 minutes.
  5. Remove the foil, spread ketchup or BBQ sauce over the top, and bake uncovered for an additional 15 minutes.
  6. After baking, let the meatloaf cool for 10 minutes before slicing and serving.
