- In a non-stick skillet, heat a tablespoon of oil over medium heat. Add chopped onion and diced green pepper, sauté for 5-7 minutes.
- Combine the sautéed vegetables with Lightlife Gimme Lean Ground Beef, oatmeal, and crumbled bread in a large mixing bowl.
- Transfer the meat mixture into a greased loaf pan, pressing it down firmly to shape it evenly.
- Preheat your oven to 375°F (190°C). Cover the loaf pan with aluminum foil and bake for 30 minutes.
- Remove the foil, spread ketchup or BBQ sauce over the top, and bake uncovered for an additional 15 minutes.
- After baking, let the meatloaf cool for 10 minutes before slicing and serving.
