  • 1 medium Onion Finely chopped.
  • 1 bunch Fresh Coriander Chopped.
  • 3 stalks Spring Onions Chopped.
  • 100 grams Breadcrumbs (Panko)
  • 1 large Egg For egg wash.

Method
 

Preparation Steps
  1. Preheat your oven to 190°C (fan-forced).
  2. Line a baking tray with parchment paper.
  3. Heat oil in a large pan and sauté garlic and onions for 2-3 minutes.
  4. Stir in Thai red curry paste, palm sugar, and fish sauce, cooking for another 2 minutes.
  5. Combine cooled mixture with sausage mince, breadcrumbs, coriander, and spring onions.
  6. Roll out puff pastry, cut into rectangles, and fill with sausage mixture.
  7. Seal the edges and optionally slice into smaller pieces.
  8. Brush tops with egg wash and bake for 25-30 minutes until golden brown.
