  • 1 medium red bell pepper or yellow/orange bell peppers
  • 1 can black beans or chickpeas/pinto beans as alternatives
  • 1 cup corn optional
  • 1/2 cup cilantro optional
For the Dressing
  • 3 tbsp oil your favorite oil or a spray for a lighter option
  • 2 tsp garlic minced
  • 2 tbsp lime juice or lemon juice as a substitute
For Seasoning
  • 1 tsp salt to taste
  • 1 tsp pepper to taste

Preparation Steps
  1. Preheat your oven to 450°F (232°C) and line two baking sheets with parchment paper.
  2. Peel and chop sweet potatoes into 1-inch cubes and dice the onion. Toss with oil, garlic, salt, and pepper.
  3. Spread the sweet potato and onion mixture on the baking sheets in a single layer.
  4. Roast in the preheated oven for about 35 minutes, stirring halfway through.
  5. While roasting, dice red bell pepper and rinse the black beans.
  6. Combine roasted sweet potatoes and onions with diced red bell pepper, black beans, fresh lime juice, and chopped cilantro in a large bowl.
  7. Serve warm or chilled, as desired.
