  • 1 medium Yellow Onion adds sweetness; shallots can replace
  • 1 medium Green Bell Pepper can use red or orange for sweetness
  • 3 cups Sweet Potatoes prefer Garnet or Jewel varieties
  • 1 teaspoon Paprika adjust according to preference
  • ½ teaspoon Garlic Powder adjust to taste

  • to taste Black Pepper adjust for heat

  • 1 medium Avocado for garnish

Method
 

Cooking Instructions
  1. Heat a large skillet over medium heat and add 2 tablespoons of olive oil. Allow the oil to warm up for about 1 minute until it shimmers.
  2. Add 1 diced yellow onion and 1 diced green bell pepper to the skillet. Sauté for about 5-7 minutes until tender.
  3. Incorporate 3 cups of diced sweet potatoes into the skillet, arranging them evenly. Cook without stirring for 5 minutes.
  4. Gently stir the sweet potatoes and cook for an additional 5 minutes until browned on both sides.
  5. Pour in ¼ cup of water and cover the skillet with a lid. Steam for 5-10 minutes until fork-tender.
  6. Remove the lid and return the sautéed onions and peppers back to the skillet. Stir well to combine.
  7. Sprinkle in 1 teaspoon of paprika, ½ teaspoon of garlic powder, and a pinch of salt and black pepper. Mix thoroughly.
  8. Remove from heat and serve warm alongside breakfast dishes.
