Cooking Instructions
- Heat a large skillet over medium heat and add 2 tablespoons of olive oil. Allow the oil to warm up for about 1 minute until it shimmers.
- Add 1 diced yellow onion and 1 diced green bell pepper to the skillet. Sauté for about 5-7 minutes until tender.
- Incorporate 3 cups of diced sweet potatoes into the skillet, arranging them evenly. Cook without stirring for 5 minutes.
- Gently stir the sweet potatoes and cook for an additional 5 minutes until browned on both sides.
- Pour in ¼ cup of water and cover the skillet with a lid. Steam for 5-10 minutes until fork-tender.
- Remove the lid and return the sautéed onions and peppers back to the skillet. Stir well to combine.
- Sprinkle in 1 teaspoon of paprika, ½ teaspoon of garlic powder, and a pinch of salt and black pepper. Mix thoroughly.
- Remove from heat and serve warm alongside breakfast dishes.
