Step‑by‑Step Instructions
  1. In a medium bowl, whisk together sweet chili sauce, soy sauce, rice vinegar, minced garlic, fresh ginger, sesame oil, salt, and pepper until well combined. Place the chicken thighs in the bowl, ensuring they are thoroughly coated with the marinade. Cover and refrigerate for at least 1 hour, ideally overnight.
  2. Preheat your oven to 400°F (200°C).
  3. Take a baking dish and lightly grease it with cooking spray or oil. Arrange the marinated chicken thighs skin-side up in the dish, and pour any remaining marinade evenly over the top.
  4. Bake the chicken thighs for 25 to 30 minutes, or until they reach an internal temperature of 165°F (74°C).
  5. For extra crispy skin, switch your oven to broil and cook for an additional 3 to 5 minutes, monitoring closely.
  6. Let the chicken rest for a few minutes after baking. Garnish with sesame seeds and chopped green onions.
