Preparation Steps
- In a large skillet over medium-high heat, melt 2 tablespoons of butter until bubbly. Add the cubed chuck roast or sirloin tips, searing the beef for about 5 minutes until each piece is browned on all sides.
- While the beef is searing, rinse and halve or quarter the baby Yukon Gold or red potatoes to ensure even cooking. Place all the potato pieces into the bottom of your slow cooker.
- Once the beef is nicely browned, transfer it to the slow cooker, placing it directly on top of the prepared potatoes. In the same skillet, add minced fresh garlic and sauté for 1-2 minutes until fragrant, then pour in Worcestershire or soy sauce along with the remaining butter. Drizzle this mixture over the meat and potatoes.
- Cover the slow cooker and set it on low for 7-8 hours or high for 4 hours.
- About halfway through the cooking time, give everything a gentle stir to redistribute the flavors. Before serving, garnish with freshly chopped herbs like rosemary or parsley.
