Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Prepare your muffin tin with non-stick spray or butter.
  2. Roll out the thawed puff pastry on a lightly floured surface until it's about 1/8 inch thick. Cut out circles that will fit into your muffin tin cups.
  3. Place each pastry circle into the muffin tin, pressing gently to form a shell. Check for tears and patch them if needed.
  4. In a mixing bowl, combine the sausage meat, 3 beaten eggs, cheddar cheese, and a sprinkle of salt and pepper. Blend until well combined.
  5. Spoon the sausage mixture into each prepared pastry cup, filling them about three-quarters full.
  6. Brush the edges of the pastry with the remaining beaten egg for a golden finish.
  7. Bake in the preheated oven for 25-30 minutes until puffed and golden brown. The filling should be fully set.
  8. Allow the pies to cool for about 5 minutes, then lift them out and serve warm.
