Method
 

Step-by-Step
  1. Preheat the oven to 400°F (200°C).
  2. Season the chicken thighs with salt, pepper, onion powder, garlic powder, smoked paprika, fresh thyme, and rosemary.
  3. Heat olive oil in an oven-safe skillet over medium-high heat.
  4. Sear the chicken thighs skin-side down for 5-7 minutes until browned and crispy.
  5. Add sliced red onion and diced Honeycrisp apples around the chicken in the skillet.
  6. In a bowl, whisk together apple cider, broth or wine, Dijon mustard, and minced garlic. Pour over the chicken.
  7. Roast in the oven for 35-40 minutes until internal temperature reaches 165°F (74°C).
  8. Let the chicken rest for 5 minutes before serving.
