Step-by-Step Instructions

  3. Pat the rack of lamb dry with paper towels. Place the rack meat side up in the greased roasting pan.
  4. Rub the marinade all over the lamb, getting into every nook. Let it rest at room temperature for 15 minutes.
  5. Transfer the rack of lamb to the preheated oven and roast for about 25 minutes, checking for an internal temperature of 130°F (54°C) for medium-rare.
  6. Remove the rack from the oven, cover loosely with foil and let it rest for 10 minutes.
  7. Slice the lamb into individual chops and arrange on a platter, ready to serve.
