Ingredients
  

For the Salmon
  • 4 fillets Salmon fresh or thawed frozen
  • ¼ cup Extra virgin olive oil for marinade
  • 1 tablespoon Lemon juice or lime juice
  • 1 teaspoon Oregano
  • 1 teaspoon Dill
  • 2 cloves Garlic minced
  • 1 tablespoon Honey or maple syrup can be omitted
  • to taste Salt
  • to taste Pepper
For the Quinoa Base
  • 1 cup Quinoa or brown rice, couscous, farro
For the Salad
  • 1 cup Cucumber diced
  • 1 cup Cherry tomatoes halved
  • ½ medium Red onion sliced
  • 1 can Garbanzo beans drained
For the Tzatziki Sauce
  • 1 cup Greek yogurt base for the sauce
  • ½ cup Grated cucumber
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dill
  • 1 clove Garlic minced
  • to taste Salt
  • to taste Pepper
  • optional Kalamata olives
  • optional Avocado
  • optional Feta cheese

Method
 

Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Whisk together the extra virgin olive oil, lemon juice, oregano, dill, minced garlic, honey or maple syrup, salt, and pepper.
  3. Marinate the salmon fillets in half of the marinade for 15 minutes.
  4. Bake the salmon fillets in the preheated oven for 9-12 minutes, until they flake easily.
  5. Mix diced cucumber, halved cherry tomatoes, sliced red onion, and drained garbanzo beans in a bowl. Drizzle with the reserved marinade.
  6. To prepare the Tzatziki, combine grated cucumber, Greek yogurt, lemon juice, dill, minced garlic, salt, and pepper.
  7. Assemble the bowl starting with quinoa, followed by the salad mix, baked salmon, and finally Tzatziki sauce and optional toppings.
