Ingredients

For the Filling
  • 1 cup Mozzarella Cheese Provides creaminess and stretch; substitute with vegan cheese for a dairy-free option.
  • 1/2 cup Feta Cheese Adds a salty, tangy flavor; can be replaced with goat cheese for a unique twist.
  • 2 cups Fresh Spinach Offers nutrition and vibrant color; any leafy green such as kale works as a great alternative.
  • 1 medium Tomato Enhances freshness and moisture; try roasted red peppers for a delightful sweetness.
  • 1/4 medium Red Onion Delivers a sharp flavor contrast; green onions can be used for a milder taste.
For the Base
  • 4 large Tortillas The backbone of your quesadilla; whole wheat or gluten-free tortillas are fantastic alternatives.
  • 2 tablespoons Olive Oil Adds flavor while frying; avocado oil or cooking spray make suitable substitutes.
For Seasoning
  • 1/2 teaspoon Black Pepper Adds a touch of seasoning; for an extra kick, incorporate red pepper flakes.

  • Mixing bowl
  • Non-stick skillet
  • spatula
  • Knife or pizza cutter

Instructions
  1. In a mixing bowl, combine mozzarella cheese, feta, spinach, tomato, red onion, and black pepper. Stir until all ingredients are well-blended.
  2. Lay one tortilla flat on a clean surface and place a quarter of the filling mixture on one half. Spread it evenly, leaving a small border around the edges.
  3. Fold the tortilla over the filling, pressing gently to seal in the ingredients.
  4. Heat olive oil in a non-stick skillet over medium heat for 1-2 minutes.
  5. Place the folded quesadilla in the skillet and cook for 3-4 minutes until the bottom is golden brown.
  6. Flip the quesadilla and cook for another 3-4 minutes until crispy and golden.
  7. Remove the quesadilla from the skillet and let it cool slightly before slicing into wedges.
  8. Serve warm with a side of salad, salsa, or guacamole.
