Method
 

Preparation Steps
  1. Preheat your oven to 350°F (186°C). Use a food processor to blitz button mushrooms, finely chopped onion, and garlic until roughly chopped.
  2. In a large mixing bowl, combine the blitzed mushroom mixture with Impossible Ground Burger, breadcrumbs, Italian seasoning, vegan Worcestershire sauce, and salt. Add whisked eggs and mix thoroughly.
  3. In a separate bowl, mix together ketchup, brown sugar, and mustard until smooth.
  4. Line a 9x5 inch loaf pan with parchment paper, press meatloaf mixture into the pan, spread half of the ketchup topping over it.
  5. Bake uncovered for 30 minutes, then add remaining ketchup mixture and bake for an additional 30 minutes.
  6. Remove from oven and let cool for 10 minutes before slicing and serving.
