Preparation Steps
- Preheat your oven to 350°F (186°C). Use a food processor to blitz button mushrooms, finely chopped onion, and garlic until roughly chopped.
- In a large mixing bowl, combine the blitzed mushroom mixture with Impossible Ground Burger, breadcrumbs, Italian seasoning, vegan Worcestershire sauce, and salt. Add whisked eggs and mix thoroughly.
- In a separate bowl, mix together ketchup, brown sugar, and mustard until smooth.
- Line a 9x5 inch loaf pan with parchment paper, press meatloaf mixture into the pan, spread half of the ketchup topping over it.
- Bake uncovered for 30 minutes, then add remaining ketchup mixture and bake for an additional 30 minutes.
- Remove from oven and let cool for 10 minutes before slicing and serving.
