Method
 

Cooking Instructions
  1. Preheat your grill to medium-high heat (about 400°F) and prepare four sheets of heavy-duty foil (12x18 inches each).
  2. In a large mixing bowl, combine halved baby Yukon Gold potatoes with sliced yellow onion. Drizzle with olive oil, add minced garlic, kosher salt, black pepper, and chopped rosemary. Toss until fully coated.
  3. Divide potato mixture among foil sheets. Dot with pieces of unsalted butter. Fold foil tightly to create packets, ensuring space for steam.
  4. Grill packets seam side up on preheated grill for about 20 minutes.
  5. Flip packets over and grill for another 12-15 minutes, or until potatoes are tender.
  6. Remove from grill, let rest for 5 minutes, then open packets carefully and top with parsley and flaky sea salt.
