  • 3-4 pounds Beef Roast boneless sirloin tip, eye of round, or chuck roast; opt for beef tenderloin for a premium experience
  • 3 tablespoons Olive Oil or any neutral oil

For the Glaze
  • 1/2 cup Cranberry Sauce jellied or whole berry types, or homemade
  • 1/4 cup Balsamic Vinegar good-quality for best results
  • 2 tablespoons Brown Sugar packed
  • 1 tablespoon Dijon Mustard or spicy brown mustard as an alternative

Method
 

Cooking Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Rub the beef roast with olive oil, seasoning with salt and black pepper.
  3. Whisk together cranberry sauce, balsamic vinegar, brown sugar, and Dijon mustard for the glaze.
  4. Coat the roast with half of the glaze and place in a roasting pan.
  5. Roast for about 1 hour, basting with remaining glaze halfway through.
  6. Check internal temperature aiming for 130-135°F (54-57°C) for medium-rare.
  7. Tent with foil and let rest for 10-15 minutes before slicing.
  8. Slice the roast against the grain and serve with any remaining glaze.
