  • 1 cup Panko Breadcrumbs Regular breadcrumbs work but may yield a thicker crust.
For the Sauce
  • 1/2 cup Peanut Butter Almond butter can be used for a unique twist.
  • 1/4 cup Sweetened Condensed Milk Honey can be used but will change flavor slightly.
  • 2 tablespoons Soy Sauce Tamari is a good gluten-free alternative.
  • 3 tablespoons Water Add more for desired consistency.

Method
 

Preparation Steps
  1. Cut the chicken thighs into bite-sized pieces, around two inches each. Season with salt and pepper.
  2. In a shallow bowl, create an egg wash by whisking together one egg with a tablespoon of peanut butter.
  3. Dip each piece of chicken into the egg wash, then dredge in panko breadcrumbs.
  4. Heat vegetable oil in a deep pan to 350°F (175°C). Fry chicken pieces for 4-5 minutes until golden brown.
  5. In a medium bowl, combine peanut butter, sweetened condensed milk, and soy sauce. Mix in water for desired consistency.
  6. Drizzle the peanut butter sauce over the chicken or serve it as a dipping sauce.
