  • 2 cups cooked rice well-cooked

Method
 

Prep
  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded rotisserie chicken, cooked rice, canned beans, salsa, and chili powder. Mix until well blended.
  3. Grease a 9x13-inch casserole dish lightly, then sprinkle a layer of cheese across the bottom.
  4. Transfer the chicken mixture to the greased casserole dish and spread evenly.
  5. Sprinkle the remaining cheese generously over the top.
  6. Bake for 30 minutes or until bubbling and cheese is golden.
  7. Allow to cool for a few minutes before serving.
