For the Roast
  • 1.2-1.4 kg Beef Rib Roast Opt for bone-in for enhanced flavor.
  • 2 tablespoons Olive Oil Can substitute with avocado oil.
  • 1 tablespoon Thyme Leaves Both fresh and dried can be used.
  • 4 cloves Garlic Cloves Use roasted garlic for milder flavor.
For the Chimichurri
  • 1 cup Parsley Leaves Cilantro can be a substitute.
  • 1/4 cup Coriander Leaves Additional parsley can be used in a pinch.
  • 1/4 cup Red Wine Vinegar Apple cider vinegar is a good swap.
  • 1 teaspoon Chilli Flakes Adjust based on spice preference.
For Serving
  • 2 pieces Lemon Wedges Lime can be used as a twist.

Method
 

Cooking Instructions
  1. Preheat your oven to 200ºC (180º fan-forced) or prepare your barbecue to the same temperature.
  2. Place the beef rib roast on a roasting rack, fat side up. Brush half of the olive oil over the surface and season with thyme, salt, and pepper.
  3. Cook the beef rib roast in the oven for approximately 50 minutes for rare, 65 minutes for medium, and 75 minutes for well-done.
  4. Rest the beef rib roast for 20 minutes covered loosely with aluminum foil.
  5. Prepare the chimichurri sauce by combining olive oil, garlic, parsley, coriander, red wine vinegar, chili flakes, salt and pepper in a food processor.
  6. Slice the rested roast and drizzle with chimichurri sauce, serving with lemon wedges.
