- Preheat your oven to 200ºC (180º fan-forced) or prepare your barbecue to the same temperature.
- Place the beef rib roast on a roasting rack, fat side up. Brush half of the olive oil over the surface and season with thyme, salt, and pepper.
- Cook the beef rib roast in the oven for approximately 50 minutes for rare, 65 minutes for medium, and 75 minutes for well-done.
- Rest the beef rib roast for 20 minutes covered loosely with aluminum foil.
- Prepare the chimichurri sauce by combining olive oil, garlic, parsley, coriander, red wine vinegar, chili flakes, salt and pepper in a food processor.
- Slice the rested roast and drizzle with chimichurri sauce, serving with lemon wedges.
