- Preheat your oven to 375°F (190°C). Gather your ingredients and tools.
- In a large skillet over medium-high heat, brown 1 pound of ground beef for about 5-7 minutes until no longer pink. Drain excess fat.
- Add a diced onion and 8 ounces of sliced mushrooms. Sauté for another 5-7 minutes until softened.
- Stir in 2 minced garlic cloves and cook for an additional minute until fragrant.
- Pour in 1 cup of uncooked long-grain white rice, 2 cups of beef broth, and 1 cup of cream of mushroom soup. Stir well and simmer for 2-3 minutes.
- Remove from heat and gently fold in ½ cup of sour cream.
- Transfer the mixture into a greased 9x13 baking dish and sprinkle with shredded cheddar cheese.
- Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes until cheese is bubbly.
- Let the dish rest for 5-10 minutes before serving. Optionally garnish with fresh parsley.
