Preparation Steps
- Preheat your oven to 450°F (230°C) for crispy tortillas.
- Brown 1 pound of lean ground beef in a skillet over medium-high heat. Add taco seasoning and red enchilada sauce, simmer for 3-5 minutes.
- Warm the corn tortillas in a damp paper towel in the microwave for 30-60 seconds.
- Lay the oiled side of the tortillas down, fill with beef mixture and Oaxaca cheese, then fold.
- Arrange tacos on a baking sheet and bake for 16 minutes until golden brown.
- Let cool for 3 minutes before serving.
