- Cook 1 cup of long-grain rice per package instructions, about 15-20 minutes. Fluff with a fork and fold in 2 tbsp lime juice and chopped cilantro. Keep warm.
- In a skillet, heat a splash of water or broth. Add 1 can of rinsed black beans and chipotle peppers; cook for 2-3 minutes. Squeeze in lime juice and season with salt. Keep warm.
- In a bowl, mix 1 cup diced tomatoes, 1 small diced onion, and cilantro. Squeeze in juice of half a lime and add a pinch of salt. Stir well and taste.
- Warm each tortilla in a non-stick skillet for 15-20 seconds until softened. Cover to keep warm.
- Assemble by laying a tortilla flat, adding rice, black beans, pico de gallo, avocado, and sour cream. Roll tightly and serve immediately.
