  • 1/2 cup Parmesan Cheese Pecorino Romano is a substitute.
  • 1/4 cup Fresh Parsley Can substitute with fresh cilantro or dried herbs.
  • 1/4 cup Fresh Basil Use dried if fresh isn't available.
  • 1 medium Onion Finely chopped; can substitute with shallots or green onions.
  • 2 cloves Garlic Minced; garlic powder can be used if fresh isn't available.
  • 2 large Eggs Flaxseed meal can serve as a vegan option.
  • 1 cup Marinara Sauce Enjoy with spaghetti or homemade tomato sauce.
  • 1 tbsp Italian Seasoning Can substitute a mix of dried oregano, thyme, and rosemary.
  • 1 tsp Salt Adjust to taste.
  • 1 tsp Pepper Adjust to taste.
  • 1 cup Mozzarella Cheese Shredded; provolone is a good alternative.
  • to taste Sliced Pepperoni or Prosciutto Optional for additional flavor.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Sauté finely chopped onion and minced garlic in a skillet over medium heat until translucent, about 5 minutes.
  3. Combine ground beef, breadcrumbs, Parmesan cheese, parsley, basil, sautéed onion and garlic mixture, eggs, marinara sauce, Italian seasoning, salt, and pepper in a large mixing bowl and mix gently.
  4. Shape the meat mixture into a rectangle about 1 inch thick on the parchment-lined baking sheet.
  5. Spread shredded mozzarella cheese over the meat rectangle, leaving about a 1-inch border; add pepperoni or prosciutto if desired.
  6. Carefully roll the meat rectangle tightly from one long side to the other, using parchment paper to assist, and place seam side down on the baking sheet.
  7. Spoon additional marinara sauce generously over the top of the rolled meatloaf.
  8. Bake for about 60 minutes, or until the internal temperature reaches 160°F (70°C) and the exterior is browned.
  9. Allow the meatloaf to rest for 15-20 minutes before slicing to let juices redistribute.
