Step-by-Step Instructions
  1. Begin by placing a large skillet over medium heat and adding a splash of olive oil. Wait for about 1-2 minutes until the oil shimmers.
  2. Add the thinly sliced onion to the hot skillet and sauté for about 2 minutes, stirring frequently until translucent and tender.
  3. Introduce the uniformly sliced yellow squash and zucchini into the skillet. Stir and sprinkle in the minced garlic, Italian seasoning, salt, and black pepper. Cook for about 7-10 minutes.
  4. Spread the veggies in a single layer and continue cooking while stirring gently until tender and lightly caramelized. Adjust seasoning if needed.
  5. Remove from heat and sprinkle fresh chopped parsley over the top before serving.
