  • 3 cups tater tots frozen or homemade
  • 4 large eggs adds protein and moisture
For the Filling
  • 1 lb ground sausage can use turkey for lighter option
  • 4 oz cream cheese Greek yogurt can be used as a healthier alternative
  • 1 cup cheddar cheese shredded, can substitute with other cheeses

Method
 

Preparation Steps
  1. Preheat the oven to 425°F (220°C) and grease a mini muffin pan.
  2. Cook the sausage in a skillet over medium-high heat until browned, about 5-7 minutes. Drain grease and mix with cream cheese.
  3. Scramble the eggs in a separate skillet for about 3-4 minutes until creamy and just set.
  4. Place three tater tots in each muffin cup and bake for 10 minutes.
  5. Press each tater tot group down firmly to form cups.
  6. Fill each cup with 1 teaspoon of scrambled eggs and 1 teaspoon of sausage mixture.
  7. Bake again for 15 minutes.
  8. Sprinkle cheddar cheese on top and bake for an additional 2-3 minutes until melted.
  9. Cool in the pan for 5 minutes before serving.
