Preparation Steps
- Preheat the oven to 425°F (220°C) and grease a mini muffin pan.
- Cook the sausage in a skillet over medium-high heat until browned, about 5-7 minutes. Drain grease and mix with cream cheese.
- Scramble the eggs in a separate skillet for about 3-4 minutes until creamy and just set.
- Place three tater tots in each muffin cup and bake for 10 minutes.
- Press each tater tot group down firmly to form cups.
- Fill each cup with 1 teaspoon of scrambled eggs and 1 teaspoon of sausage mixture.
- Bake again for 15 minutes.
- Sprinkle cheddar cheese on top and bake for an additional 2-3 minutes until melted.
- Cool in the pan for 5 minutes before serving.
