  • 1 cup Sweet Corn canned, fresh, or frozen
  • 1 medium Red Bell Pepper diced small
  • 1 medium Purple Onion or green onions
  • 1 cup Cheddar Cheese shredded
For the Dressing
  • 1 cup Mayonnaise or Greek yogurt for a tangier option
  • 2 tbsp Lime Juice freshly squeezed

Method
 

Preparation Steps
  1. Prepare all ingredients by dicing the red bell pepper and purple onion, and grating the cheddar cheese.
  2. In a large mixing bowl, combine sweet corn, diced bell pepper, purple onion, and shredded cheddar cheese.
  3. In a separate bowl, mix mayonnaise and lime juice until smooth.
  4. Pour the dressing over the salad mixture and fold gently to combine.
  5. Fold in Chili Fritos just before serving.
  6. Spoon salad into a serving dish and garnish if desired.
