- Preheat your oven to 400°F (200°C).
- Slice the ripe peaches in half and position them cut side up on a prepared baking sheet. Drizzle honey over the peaches.
- Roast the peaches in the oven for approximately 20 minutes until tender and slightly caramelized.
- Let the peaches cool slightly, then transfer them to a blender and blend until smooth.
- In a separate bowl, combine the plain yogurt, remaining honey, and vanilla extract. Stir gently to incorporate.
- Gently swirl the yogurt mixture into the peach purée with a spatula to create a marbled effect.
- Fill your popsicle molds with the mixture, leaving room at the top for expansion. Insert the popsicle sticks.
- Freeze the molds for 4 to 6 hours or overnight.
- To unmold, dunk the molds in warm water for a few seconds to release.
