Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken thighs dry with paper towels, then season with salt, pepper, paprika, and garlic powder.
  3. Heat olive oil in an oven-safe skillet over medium-high heat and sear the chicken thighs skin-side down for about 5 minutes until golden.
  4. Flip the chicken thighs and cook for an additional 2 minutes, then remove from skillet.
  5. Add cubed potatoes to the same skillet, seasoning them with rosemary, salt, and pepper.
  6. Nestle the seared chicken thighs back on top of the seasoned potatoes.
  7. Roast in the preheated oven for 25 to 30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  8. Stir the potatoes halfway through roasting for even cooking.
