Step-by-Step Instructions for Rhubarb Bars
- Preheat your oven to 350°F (175°C) and prepare a 13x9 inch baking dish by greasing it or lining it with parchment paper.
- In a mixing bowl, combine 2 cups of all-purpose flour with 1/4 cup granulated sugar. Then, add 1 cup of softened unsalted butter, and blend until it resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared baking dish and bake for about 15 minutes until lightly golden.
- While the crust is baking, whisk together 3 large eggs, 2 cups of granulated sugar, 1/3 cup of all-purpose flour, and 1/2 teaspoon salt in another bowl until smooth. Gently fold in 4 cups of diced fresh rhubarb.
- Once the crust has finished baking, pour the rhubarb filling over it and spread evenly. Bake for an additional 40-45 minutes until set with a slight jiggle.
- Allow the rhubarb bars to cool completely in the pan on a wire rack for 1-2 hours before cutting into squares or rectangles.
