- Start by cutting a ripe watermelon into manageable chunks and removing any seeds. Scoop out around 2 cups of the watermelon flesh and place it in the freezer for about 30 minutes to chill.
- In a high-speed blender, combine the chilled watermelon chunks, about 1 cup of frozen strawberries, the frozen banana, 1/2 cup of vegan yogurt, and the juice and zest of one lime. Blend on high for 30-45 seconds until smooth and creamy.
- After blending, check the thickness. If it's too thick, add a small amount of cold water, starting with 1/4 cup. Blend for another 10-15 seconds until desired consistency is achieved.
- Pour the smoothie into chilled glasses. For fun, serve it in a hollowed-out mini watermelon and garnish with a slice of lime or extra berries if desired.
