- In a medium saucepan, combine 1 cup of warm water with ¾ cup of granulated sugar. Heat over medium heat, stirring continuously until the sugar dissolves completely, about 2-3 minutes. Add 1½ cups of chopped fresh fruit and bring to a gentle boil, then reduce to a simmer for 20 minutes.
- Remove the saucepan from heat and let the mixture cool for a few minutes. Use a fine mesh strainer to pour the fruit mixture into a bowl or jar, catching any solids. Discard the residue and let the syrup cool completely.
- Grab a tall glass and fill it with ice cubes. Pour 4 tablespoons of cooled fruit syrup over the ice. Gradually add club soda or carbonated water until the glass is about three-quarters full.
- Top with a splash of cream or half and half and give it a gentle stir to mix the layers.
- Serve immediately, garnished with a slice of the same fruit or a sprig of mint.
