  • 1 small Red Onion Soak in cold water to mellow flavor.
  • 1 medium Seedless Cucumber Zucchini can be used as a substitute.
  • 1 cup Radicchio Optional for added color.
For the Crunch
  • 1/2 cup Candied Pecans Toasted walnuts or almonds can be used.
For the Creaminess
  • 1/2 cup Goat Cheese Optional, can replace with feta.
For Garnish
  • 1 cup Edible Flowers Use only confirmed edible varieties.

Method
 

Preparation Steps
  1. In a mixing bowl, combine halved red onions with cider vinegar, sugar, and salt. Allow to marinate for 10 minutes.
  2. Drizzle olive oil into the onion mixture. Whisk in honey, Dijon mustard, lemon juice, and a pinch of salt and pepper.
  3. In a large bowl, combine baby arugula, fresh herbs, radicchio, cucumber, and blueberries.
  4. Pour the dressing over the salad and toss gently to coat all ingredients.
  5. Optional: Sprinkle crumbled goat cheese and edible flowers over the top before serving.
