  1. In a medium mixing bowl, combine granulated white sugar, sesame seeds, crushed garlic, and chopped green onions. Pour in soy sauce, rice vinegar, Chinese chili oil, and sesame oil, and whisk together until the sugar is dissolved.
  2. Select fresh English cucumbers and trim both ends. Use chopsticks to stabilize each cucumber as you make diagonal cuts to create spiral shapes.
  3. Place spiral-cut cucumbers in a large bowl and sprinkle generously with salt. Gently massage the salt into the cucumbers and let sit for 8-10 minutes.
