Preparation Steps
- Start by washing and hulling the fresh strawberries, then blend them with sugar and water until smooth. Set aside.
- Rinse the blueberries and blend them with sugar and water until smooth. Set aside.
- In a bowl, combine heavy whipping cream and coconut milk, blending until well combined. Set aside.
- Add red food coloring to the red layer and blue food coloring to the blueberry layer. Stir until desired color is achieved.
- Pour the red mixture into popsicle molds, filling each about one-third full and freeze until firm, about 1 hour.
- Add the white layer on top of the red, return to freezer for another hour.
- Pour the blue layer to fill the molds, seal tightly, and freeze for at least 3-4 hours.
- To release the popsicles, dip the molds in warm water for 10-15 seconds and gently pull on the sticks.
