  • 1/4 cup Granulated Sugar adjust to taste
  • 1/2 cup Water
Blue Layer
  • 2 cups Fresh Blueberries
  • 1/4 cup Granulated Sugar adjust to taste
  • 1/2 cup Water
White Layer
  • 1 cup Heavy Whipping Cream
  • 1/2 cup Coconut Milk or Plain Greek Yogurt
Color Enhancers
  • 1 drop Red Food Coloring optional
  • 1 drop Blue Food Coloring optional
Miscellaneous
  • 1 cup Warm Water for releasing popsicles

Method
 

Preparation Steps
  1. Start by washing and hulling the fresh strawberries, then blend them with sugar and water until smooth. Set aside.
  2. Rinse the blueberries and blend them with sugar and water until smooth. Set aside.
  3. In a bowl, combine heavy whipping cream and coconut milk, blending until well combined. Set aside.
  4. Add red food coloring to the red layer and blue food coloring to the blueberry layer. Stir until desired color is achieved.
  5. Pour the red mixture into popsicle molds, filling each about one-third full and freeze until firm, about 1 hour.
  6. Add the white layer on top of the red, return to freezer for another hour.
  7. Pour the blue layer to fill the molds, seal tightly, and freeze for at least 3-4 hours.
  8. To release the popsicles, dip the molds in warm water for 10-15 seconds and gently pull on the sticks.
