Method
 

Preparation Steps
  1. Slice the ripe avocado in half, remove the pit, and scoop the flesh into a medium bowl. Mash it with a fork, adding fresh lime juice.
  2. Fold in the rinsed black beans, sweet corn, chopped red onion, and fresh cilantro to the mashed avocado.
  3. Sprinkle the cumin powder, chili powder, salt, and black pepper over the filling and fold gently to combine.
  4. Warm each tortilla in a dry skillet over medium heat for about 15–20 seconds on each side or microwave wrapped in a damp paper towel.
  5. Lay the warm tortilla flat, spoon a quarter of the filling into the center, and shape it into a log, leaving space at the edges.
  6. Fold in the short sides of the tortilla and roll tightly from the bottom upwards to secure the filling.
  7. Slice the burritos diagonally and serve immediately with fresh salsa or guacamole.
