  • 1 cup Protein (Ground Turkey, Beans, Shredded Chicken) Lentils or tofu for a vegan option.
  • 2 cloves Garlic Minced fresh preferred.
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder Adjust to taste.
  • 2 cups Spinach Kale can be used for a firmer bite.
Topping Option
  • 1 cup Cheese (Optional) Dairy-free for vegan.

Method
 

Preparation Steps
  1. Preheat your oven to 400°F (200°C). Gather a baking sheet and parchment paper.
  2. Wash sweet potatoes, slice in half lengthwise, drizzle with olive oil and salt. Place cut-side down on baking sheet and roast for 35-45 minutes.
  3. Heat a tablespoon of olive oil in a skillet. Sauté diced onions and bell peppers for 5-7 minutes until softened.
  4. Add chosen protein, garlic, cumin, chili powder, salt, and pepper. Cook until protein is done, about 8-10 minutes. Stir in spinach to wilt.
  5. Scoop out some flesh from each sweet potato half. Combine the flesh with the protein filling and refill sweet potato skins.
  6. Sprinkle cheese on top and bake for an additional 10 minutes until melted and bubbly.
  7. Let cool slightly, garnish with fresh herbs or green onions, and serve warm.
