Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and prepare a loaf pan with nonstick cooking spray.
  2. Melt about 2 tablespoons of butter in a medium skillet. Add chopped yellow onion, diced green bell pepper, and sliced brown mushrooms. Season with kosher salt and pepper. Sauté vegetables for about 4 minutes until softened, then set aside to cool.
  3. In a large bowl, combine 1.5 pounds of ground beef with sautéed vegetables, 0.25 cup of ketchup, 2 tablespoons of Worcestershire sauce, 2 beaten eggs, and 1 cup of panko breadcrumbs. Mix gently until just combined.
  4. Press half of the meat mixture into the prepared loaf pan. Layer with slices of provolone cheese, then shape the remaining meat mixture on top.
  5. Bake for about 40 minutes. Check internal temperature to ensure it reads around 160°F (71°C). Sprinkle 0.5 cup of shredded provolone cheese on top and return to the oven for an additional 15-20 minutes.
  6. Remove the meatloaf from the oven, let it cool for about 10 minutes, slice, and serve warm.
