- Preheat your oven to 375°F (190°C) and prepare a loaf pan with nonstick cooking spray.
- Melt about 2 tablespoons of butter in a medium skillet. Add chopped yellow onion, diced green bell pepper, and sliced brown mushrooms. Season with kosher salt and pepper. Sauté vegetables for about 4 minutes until softened, then set aside to cool.
- In a large bowl, combine 1.5 pounds of ground beef with sautéed vegetables, 0.25 cup of ketchup, 2 tablespoons of Worcestershire sauce, 2 beaten eggs, and 1 cup of panko breadcrumbs. Mix gently until just combined.
- Press half of the meat mixture into the prepared loaf pan. Layer with slices of provolone cheese, then shape the remaining meat mixture on top.
- Bake for about 40 minutes. Check internal temperature to ensure it reads around 160°F (71°C). Sprinkle 0.5 cup of shredded provolone cheese on top and return to the oven for an additional 15-20 minutes.
- Remove the meatloaf from the oven, let it cool for about 10 minutes, slice, and serve warm.
