Step-by-Step Instructions
  1. Rinse 1 cup of uncooked brown rice under cold water until clear, then combine with 2 cups of vegetable broth in a medium saucepan. Boil, reduce to low, cover, and simmer for 45-50 minutes until tender.
  2. After the rice is cooked, let it sit covered for 5 minutes. In a large bowl, combine 3 tablespoons of peanut butter, 2 tablespoons of soy sauce, 1 tablespoon of vinegar, and hot sauce. Stir until smooth.
  3. Fluff the cooked rice with a fork and add it to the peanut butter mixture. Mix thoroughly to ensure the rice is coated.
  4. If desired, fold in 1 cup of frozen peas or edamame over medium heat for 5 minutes until warmed through.
  5. Taste and adjust seasoning if needed, then transfer to bowls, garnish with chopped green onions, and serve.
