Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, whisk together the peach preserves, soy sauce, Dijon mustard, garlic powder, onion powder, and a touch of salt and pepper until smooth.
  3. Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
  4. In an oven-safe skillet, heat a splash of oil over medium-high heat and sear the chicken thighs skin-side down for 5-7 minutes.
  5. Flip the chicken thighs and sear the other side for an additional 3-4 minutes.
  6. Pour the prepared peach glaze over the seared chicken thighs.
  7. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  8. About 10 minutes before the chicken is done, stir in diced fresh peaches around the chicken.
