- Preheat your oven to 400°F (200°C).
- In a mixing bowl, whisk together the peach preserves, soy sauce, Dijon mustard, garlic powder, onion powder, and a touch of salt and pepper until smooth.
- Pat the chicken thighs dry with paper towels and season both sides with salt and pepper.
- In an oven-safe skillet, heat a splash of oil over medium-high heat and sear the chicken thighs skin-side down for 5-7 minutes.
- Flip the chicken thighs and sear the other side for an additional 3-4 minutes.
