  • 2 tbsp Olive Oil for searing

  • 1 medium Onion yellow or white
  • 3 cloves Garlic minced
  • 1.5 cups Long-Grain White Rice or brown rice with adjustments

  • 2 cups Chicken Broth or vegetable broth
  • 1/4 cup Honey can use maple syrup
  • 1/2 cup BBQ Sauce your choice of flavor
  • 2 tbsp Soy Sauce or tamari
For the Veggies
  • 1 cup Frozen Peas or mixed vegetables
  • 1 cup Corn Kernels or bell peppers/green beans
For Garnishing
  • 1/4 cup Fresh Parsley optional, chopped

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Gather your ingredients and prepare a large oven-safe skillet.
  2. Season the chicken breasts with salt, black pepper, and smoked paprika on all sides.
  3. Sear the chicken in olive oil for about 3 minutes on each side until golden brown. Then transfer to a plate.
  4. Sauté chopped onion and minced garlic in the same skillet for 2-3 minutes until onions are translucent.
  5. Add long-grain white rice to the skillet, stirring for about 2 minutes to coat the rice with the mixture.
  6. Pour in chicken broth, honey, BBQ sauce, and soy sauce. Mix thoroughly.
  7. Nestle the seared chicken back into the skillet, placing it over the rice mixture.
  8. Sprinkle frozen peas and corn over the chicken and rice evenly.
  9. Cover with a lid or aluminum foil and bake for 25-30 minutes until rice is fluffy and chicken is cooked to 165°F.
  10. Let the dish rest, covered, for 5 minutes before serving.
  11. Garnish with fresh parsley if desired before serving.
