Step-by-Step Instructions for Napa Cabbage Tofu Soup
- In a medium pot, pour in 4 cups of chicken broth and set it over medium-high heat. Bring to a gentle boil, about 5 minutes.
- Once boiling, stir in 1 tablespoon of freshly grated ginger, 2 chopped green onions, 2 minced garlic cloves, and 2 tablespoons of light soy sauce. Simmer for 2 minutes.
- Add the white parts of the napa cabbage and mushrooms, if using. Cook for about 4 minutes until the cabbage softens and mushrooms are tender.
- Gently stir in the green parts of napa cabbage and 1 cup of diced soft tofu. Cook for an additional 2-3 minutes until heated through.
- Season with 1 teaspoon of chicken bouillon powder, sprinkle white pepper, and add sesame oil. Taste and adjust seasonings.
- Ladle the soup into bowls and serve immediately, garnishing with extra green onions if desired.
