Preparation Steps
  1. Preheat your oven to 350°F (175°C); line a baking sheet with parchment paper.
  2. In a skillet, add olive oil, onions, and garlic. Sauté for about 5 minutes until onions are translucent.
  3. In a mixing bowl, combine ground beef, breadcrumbs, Parmesan, parsley, basil, sautéed onion, garlic, eggs, marinara, Italian seasoning, salt, and pepper. Mix until just combined.
  4. Transfer the mixture to the parchment paper and shape into a rectangular loaf about 1 inch thick.
  5. Spread mozzarella cheese on the midpoint of the meatloaf, leaving an inch at the edges; optionally add pepperoni or prosciutto.
  6. Roll the meatloaf using the parchment paper to enclose the filling, ensuring it is snug but not too tight.
  7. Place the rolled meatloaf seam-side down on the baking sheet; pour marinara sauce over the top.
  8. Bake in the preheated oven for 60 minutes or until the internal temperature reaches 160°F (70°C).
  9. Let the meatloaf rest for 15-20 minutes before slicing to allow juices to redistribute.
