Preparation Steps
- Preheat your oven to 350°F (175°C); line a baking sheet with parchment paper.
- In a skillet, add olive oil, onions, and garlic. Sauté for about 5 minutes until onions are translucent.
- In a mixing bowl, combine ground beef, breadcrumbs, Parmesan, parsley, basil, sautéed onion, garlic, eggs, marinara, Italian seasoning, salt, and pepper. Mix until just combined.
- Transfer the mixture to the parchment paper and shape into a rectangular loaf about 1 inch thick.
- Spread mozzarella cheese on the midpoint of the meatloaf, leaving an inch at the edges; optionally add pepperoni or prosciutto.
- Roll the meatloaf using the parchment paper to enclose the filling, ensuring it is snug but not too tight.
- Place the rolled meatloaf seam-side down on the baking sheet; pour marinara sauce over the top.
- Bake in the preheated oven for 60 minutes or until the internal temperature reaches 160°F (70°C).
- Let the meatloaf rest for 15-20 minutes before slicing to allow juices to redistribute.
